My clients, many of whom need to eliminate wheat from their food plan, ask what kind of bread they can eat.
Here it is-an easy bread recipe minus all of the food trigger ingredients!
Thank you to one of my teachers Caroline Sutherland for this delicious recipe.
Yummy and Easy Soda Bread
2 cups flour - rye, millet, rice, amaranth or a combination of flours. (note from Dr. Miluna-as I experiment-do NOT use buckwheat flour- not the right consistency, and tastes bad)
1 1/2 tsp baking powder
1/4 tsp baking soda
1 cup water or alternative milk - rice milk or almond milk
Preheat oven to 350 degrees
Mix dry ingredients.
Add liquid and stir to form soft dough.
Place on a lightly floured board (use alternative flour) and knead for one minute.
Shape into a round loaf.
Place on an oiled baking sheet.
Cut a cross on the top of the loaf with a sharp knife, so that air can escape while baking.
Bake for 45 - 60 minutes or until loaf sounds
hollow when tapped.
Cool loaf on side before cutting.
* Variations - add a handful of sunflower seeds, flax seed, a banana, walnuts or grated carrot to the dough.
